yes, they are brmdl, so they can be easily extracted with different tools, but Wii models have a lower quality than the ps3 ones.

The only software that I know which can do that is 3D Object modeller, http://www.3dsom.com/features/index.html .......I tried the pro version of this software some time ago but i was not so enthusiast for the low quality of the model and textures.....so yes! it is possible (but it is not so simple)...

well the only reason I mentioned FBX as buggy is because I use a gameengine called gamecore. FBX works tip top until 3ds max came with the newer versions.
