Which tool, here is no specific tool for the GT6 game yet, and if there where one, GT5 would have not being supported since GT6 already has all cars from previous game, and before, thus would have been a waste of time in reversing it.

at least GT5 does not have tesselation on its models, although it is an old game so maybe the models are low poly count.
What is a good pkg ripper for GT6?

You meant to say PS3 PKG extractor maybe? There are plenty options out there.
If that is what you meant then I recommend: PkgView v1.3

the work on GT6 tool is suspended indefinitely

No, it requires newer/latest PS4 firmware exploited, with out it no game can be reversed.
Currently supported only up to update 1.14 I think.

Is there a list of car folders? because all extracted files are 0000 etc and it's impossible to find anything

There is an easy way to find the names of the cars. Open the BODY file in the editor.
In the body file you can find the name of the cars.
Example:
X: \ GT6 \ Car \ 0037 \ 0024 is the VW Golf R 2011
Scroll down in the open file, you found

// polyphony / dfs / GT / gt6 / src / car / 0037/0024 / maya / source images / GT / GT5 / VW_Golf_R_2011 /

At the moment I found the following folder
0037 = Volkswagen
0039 = Opel
0053 = Mercedes Benz
0058 = Vauxhall
0225 = Ferrari

This was asked by somebody, but still not answered.
When using the gttool the result is: "Unable to process volume file." Any fix for this?

My way for win 10. Make two new folders in the file explorer.
X: \ gt6_vol_file
X: \ gt6_extract_file
Copy the gttool and gt6.vol in the x: \ gt6_vol_file
Use the keys WIN + R. Type CMD, press Enter.

In the Command Prompt window, navigate to the X: \ gt6_vol_file folder.

Start the Gttool

gttool GT6.VOL GT6 X: \ gt6_extract_file

It is important to use the GT6 argument for the tool.Without the argument GT6 there is the error message "Unable to process volume file." Should the tool start now, patience you must have ... it takes some time to extrate.
